Stuffed Vegetables

  • 8 zucchini.
  • 4 peppers.
  • 2 tbs of butter.
  • 2 tbs of olive oil.
  • 1 medium yellow onion, diced.
  • 1/5 kilos of ground beef.
  • 1 tsp of kosher salt.
  • 1 tsp of black pepper.
  • 1 tsp of cumin.
  • 1 tsp of nutmeg.
  • 2 tbs of tomato paste.
  • 1/2 cup of chopped fresh parsley.
  • 1/2 cup of chopped fresh dill.


Preparing The Stuffed Vegetables


Using an apple corer, remove the insides of the zucchini and clean the peppers.


Wash them well.


Prepare the stuffing: In a large skillet, heat 2 tbs of olive oil plus 2 tbs of butter over medium-high heat. Toss in the chopped onions and saute until soft and fragrant, about 3 minutes. add the ground meat then Sprinkle in the allspice, black pepper, nutmeg, and cumin. Add the parsley and dill. Stir in 2 tablespoons tomato paste.


Raise the heat and bring the mixture to a boil till the meat is well done, Season with salt Remove from the heat


Working with one vegetable at a time, pat it dry and spoon the stuffing to within 1/2 inch of the opening. Place the vegetables, vertically with the open end up, in a pot. Repeat with remaining vegetables.


cover the vegetables with a heatproof plate, cover the pot and bring to a boil over high heat. Reduce the heat and simmer until the vegetables are tender, 35 minutes.
