  • 2 large eggs
  • ½ cup of finely grated broccoli florets
  • 1 Tbsp of butter or ghee
  • 2 Tbsp of parmesan cheese and mozzarella for the filling
  • Pinch of Salt and pepper


Preparing The Omelette


Place eggs and grated broccoli in a bowl


Mix well with a fork


Heat butter in 8-inch skillet over medium-high heat until it bubbles


Pour the eggs into the hot pan and immediately start mixing them with a fork until the curds begin to form.


Use a spatula or fork to fold the eggs over themselves either in half or thirds.


You can make the omelet plain but it can be filled with parmesan cheese, mozzarella cheese or whatever you like.
